$138 A Week For Groceries - Day 14 Meals (Friday)

Just playing quick catchup on meals before I get to my Shopping Day 3 post...

Slow Cooker Chicken Tortilla Soup - sans beans,
and pre-tortilla strips :)


If you're just joining us, this post is part of my 30 day grocery budget diary in which I detail all my grocery shopping for a month as well as all the home-cooked/prepared food our family enjoys from those groceries and the cost of each meal, as well as each serving where applicable.

I'm also sharing recipes as well as my thought process and ideas for repurposing leftovers and generally making the best use possible of the food in my kitchen.

Breakfast

Half ham sandwich for me, whole for Dean, cereal for Joey. Izz had a banana and milk.

BREAKFAST TOTAL (2 adults, 1 teen, 1 toddler): $4.13

Lunch

Joey's still on his no-sandwich kick, so an apple and juice pouch for him.

For Dean, another kiddie lunch plus the rest of the leftover chicken salad from the day before with a little bit of radish and carrot for crunch.


For me, a salad made with some of the chicken breast I roasted on Sunday over the last of the green cabbage, some carrot and radish, dressed with yet more of the Miso Ginger Dressing I made last week, and topped with some chopped cilantro.

Izz had a little bit of chicken, but generally had little interest in eating. Milk as usual. Her usual 4 little cookies throughout the day tacked on here.



I ended up eating the rest of the leftover roast chicken breast with some sriracha and mayo later in the afternoon.

LUNCH TOTAL (2 adults, 1 teen, 1 toddler): $5.02

Dinner

for me, Dean, Joey, and Izz was some of the Slow Cooker Chicken Tortilla Soup with which I christened my new slow cooker. Sans beans. I know some of y'all think it's not complete without beans, but the fact aside that I didn't have beans in the house when I made it, I just wasn't feeling beans in my soup last week.

Served over a little bit of steamed jasmine rice and garnished with chopped onions, cilantro, and a squeeze of lime. A few shakes of Tapatío went in there as well.

Truth be told, I'm usually not feeling beans in my soup, but every once in a while, I am.





For Mads, because she really likes Vietnamese Grilled Pork and missed it during the week when she was at her other house, was some of that with steamed rice and kimchi on the side.


We generally try to eat the same meal together, but once in a while, we indulge individual cravings if they can be met with reasonably little fuss.

The soup made 6 servings, of which we had 3.

DINNER TOTAL (2 adults, 2 teens, 1 toddler): $7.07

CHICKEN TORTILLA SOUP & RICE FOR 6: $6.82
COST PER SERVING: $1.14

MEALS DAY 14 TOTAL: $16.22

Off to get some stuff a simmerin' before I tackle Shopping Day 3 breakdown...
