Tortilla Cheese and Spinach Pie


My daughter has been bugging me to make this dish........I don't blame her because it is a favorite of all of ours.  I especially love it because the crust is nothing more than a large burrito size flour tortilla.  It's so easy to make and is a great weeknight meal.  We like to serve it Mexican style with sour cream, salsa and chilies.






Tortilla Cheese and Spinach Pie



5 eggs
2 tablespoons milk
3 roasted garlic cloves, crushed
1/4 teaspoon lemon pepper
1 dash salt
3 slices cooked bacon, chopped
1 large flour tortilla
1 1/2 cups extra sharp cheddar, shredded
3 cups fresh spinach

Mix the first six ingredients in a bowl and set aside.  

Spray a pie plate with cooking spray and lay the flour tortilla in it 
and press gently.

Sprinkle tortilla with a 1/2 of cheese and  add spinach and top with 
the remaining cheese.

Pour egg mixture evenly over spinach, being careful not to pour any 
outside the tortilla.

Bake at 365 degrees for 30-35 minutes or until set.



You can change the meat if you like... tonight I used center cut
bacon but sausage,  or leftover taco meat would be great.  Can
 you tell I have a thing for leftover taco meat?  I make my own
 taco seasoning and I like to add it to a lot of my egg recipes. 
 I love it  in my Baked Taco Eggs and it's terrific in this dish as well.



With a 10 year daughter and two teenage sons....always make two.  How about you?
