Boozy Bum Chickens with Homemade Cajun Seasoning
The week prior to Labor day I was intrigued by a new Irish chef named Donal Skehan. I promptly checked my local library to see if they had a copy of one of his cookbooks. They did! They had his first cookbook called "Good Mood Food". Donal says he isn't a chef but a home cook. It shows in his recipes. They are fresh, tasty, easy recipes perfect for my style of cooking.
I actually found the recipe for Boozy Bum Chickens on his website. It's really more of a technique than a recipe and it's not like I haven't heard of it before. It is an American thing after all. I just loved what he named his "Beer Can Chicken"and it sounded fantastic to barbeque for the upcoming holiday.It was outstanding! I don't know why Jim and I haven't tried this method before but we won't stop now! The chicken was so moist, juicy and tender!
We poured out a little tiny bit of beer from our cans and put in a sqeeze of lime and a few sprigs of thyme leaves. You could actually hear the beer boiling while it was cooking sending up all those aromatics to wonderfully infuse the chicken with amazing flavors. I also took the liberty of making my own Cajun seasoning mix. It's so easy and make s a HUGE difference in the taste.
1/4 cup Paprika
2 tsp. salt
2 tsp. garlic powder
2 tsp. onion powder
2 tsp. cayenne
1/2 tsp. white pepper
1/2 tsp. black pepper
1/2 tsp. dried basil leaves
1/2 tsp. dried oregano leaves
1/2 tsp. dried thyme leaves
1 tsp. Colman's dry mustard
1/2 tsp. sugar
Combine all ingredients in a small bowl and store in a jar with
a tight seal. Enough for two Boozy Bum Chickens!

in the neighborhood behind ours in a creek bed that runs behind our house. We watched and were a little concerned because we kept getting little white things that looked like strings floating into our yard. Turns out it was ash from the fire. The last two weeks we have had wildfires all over Oklahoma and they have had some horribly devastating effects. Luckily the firemen got our wildfire under control pretty quickly so there weren't any homes lost. I'll I can say is a big THANK YOU to our firemen! They do a fantastic job!
