Vanilla "Dutch Baby" Pancake
For my birthday a couple of years ago my son bought me the coolest crepe maker. They have become a favorite breakfast at my house topped with powdered sugar and lingonberries. The problem is if you make 2 or 3 for each person it can definitely be very time consuming. Especially if my daughter's friend Emily is spending the night. She can eat 4 by herself!
I thought the batter for German "Dutch Baby" pancakes sounded a lot like my crepes so I started googling recipes. I found Melissa D'Arabian's "Vanilla Dutch Baby Pancake" and thought I'd give it a try. It is so fast and easy to make and tastes really similar to my favorite crepes without all the work!

I cooked the "dutch baby" in my cast iron skillet and I have to say it was just gorgeous when it came out of the oven. It would be very impressive to serve to guests! I will be making this little "baby" again soon....you can count on that!
