Slow Cooker Honey Ginger Pork with Jasmine Rice



I love my weekends!  That's why I use my slow cooker a lot on Saturdays and Sundays!  I want to serve delicious foods to my family with a minimal amount of work so I still have time to relax.  I combined a couple of recipes for this one and it turned out extremely yummy!  


I must say I've grown very fond of the hoisin sauce used in this dish.  Another family favorite recipe using this fragrant pungent sauce is my "Chinese Spaghetti".  Hoisin just adds so much wonderful flavor and depth to any Asian recipe.  



Slow Cooker Honey Ginger Pork with Jasmine Rice


2 lbs. pork tenderloin
1/2 cup low sodium soy sauce
1/2 cup honey
1/4 cup hoisin sauce
2 tablespoons rice vinegar
2 teaspoons fresh ginger, minced
1/2 - 1 tsp. crushed red pepper flakes (depending on how spicy you like it)
5 cloves garlic, minced
1 small onion, diced small
3 tablespoons cornstarch
3 tablespoons water

Combine soy sauce, honey, hoisin sauce, rice vinegar, fresh ginger, garlic, chopped onion and crushed red pepper flakes in a medium bowl.

Place pork tenderloin in the bottom of the slow cooker that has been sprayed with cooking spray.

Pour sauce over the top of the pork and cook on low for 6-8 hours or on low for 4- 5 hours.

After the pork has cooked for a few hours try to start breaking it up and smashing it with a wooden spatula to shred.

In a small bowl, combine the cornstarch and water and mix well.   Add the cornstarch mixture to the pork and sauce stirring well.  Let cook for a few minutes to thicken.  

Serve over Jasmine Rice and top with slices of green onion for garnish.



This slow cooker Honey Ginger Pork came together really fast and the smell of this cooking was just amazing!  I served it over Jasmine Rice and some of our favorite Korean Mandu as a side.  It's definitely a new favorite at our house!
