Pesto Puff Pastry Eggs with Bacon and Cheese


Our family loves eggs!  Most weekends we have them soft boiled with a soft gooey center with toast and jam, but we love them just about any way at all.  I'm always trying to add flavor to my eggs wherever I can, here I did it in the form of pesto.  It almost makes the pastry like a little breakfast pizza.   You could add any cheese you have on hand and change up the meat to ham or sausage.  Here are a few of our other favorite egg recipes as well.....

Pesto Puff Pastry Eggs with Bacon and Cheese


2 sheets Puff Pastry (1 pkg)
8 tablespoons Pesto
8 strips bacon, cooked and chopped
4 oz. cheddar cheese, shredded
8 medium eggs
salt
pepper
granulated garlic

Thaw puff pastry for approx. 40 minutes and cut each piece into 4 equal squares.

Fold up the edges of the puff pastry about 1/4" to form a border

Place a tablespoon of pesto on each pastry and spread out to the edges.

Sprinkle cheese on each pastry.

Crack egg into the center of each square.

Top with bacon, salt, pepper and granulated garlic.

Bake for 15 minutes or until pastry is raised and brown being careful not to over cook the egg.



We had these for dinner tonight.  They really hit the spot on this cold snowy Sunday night.  We served them with some crispy crowns and some piping hot coffee.  Hmmm....total comfort food!
