Healthy and Quick Soy Soba Noodles

Healthy and quick - organic soba noodles tossed with garlic oil, thick soy sauce and accompanied with fish cakes and fresh baby spinach.  An extremely easy and fulfilling dish to put together especially when time is of the essence.  The garlic oil is the only messy part but then I've tried making this dish eschewing the fragrant garlic oil and it just didn't fly, so I just force myself to go through the rather monotonous task of mincing garlic :O.  Anyway, jokes aside - do substitute the noodles with other noodles of your choice although soba makes this dish healthier for sure say if compared with egg noodles.  This method of making noodles was popularised in my household by my late maternal grandmother - do give it a try soon!

Healthy Soy Soba Noodles

This post is part of my Yuen Chun Recipes.  The thick caramel sauce is by Yuen Chun and has remained one of their most popular sauces for decades. 

Serves 2

Ingredients:

2 bundles of organic soba noodles (I used the dried ones)
4 cloves garlic, minced
3 tablespoons oil
2 fish cakes, sliced
1 handful of baby spinach

Seasoning:

1 tablespoon thick caramel sauce
Dash of sesame oil
Dash of light soy sauce or to taste
Dash of white pepper

Serve with chili oil (optional)

Method:

Firstly, boil the fish cakes.  Slice and set aside.  Cook the baby spinach by blanching quickly in boiling water and remove once wilted.  Set aside and once cooled a little, squeeze out excess water.  Next, boil the noodles according to package instructions.

Now add the seasoning ingredients into a tossing bowl.  Add the noodles, fish cakes and spinach.  Toss well.  Add more soy sauce if desired. 

Serve hot.
