Bitter Gourd Omelette Recipe

I love holidays as much as the next person but the post-holidays blues are just so difficult to combat, don't you think? Well, I guess then it's time to look forward to the next holiday :o.  Today's feature is an exceedingly simple Chinese style omelette made with bitter gourd or bitter melon.  The slightly bitter taste of the vegetable goes surprisingly well with the egg and you'll really need to try it to get what I mean.  If you are a fan of bitter gourd, I definitely recommend for you to give this a try.

Chinese Bitter Gourd Omelette

It's quite important to slice the bitter gourd thinly and I like to marinate the slices in a bit of salt - makes them crunchier, a tip from my mom.  Apart from that, just a drop or two of light soy sauce in the beaten egg before you start frying and that's about all the condiments you'll need in this easy dish.

Chinese Bitter Gourd Omelette

Serving suggestion: with steamed rice

Ingredients:

1 bitter gourd, sliced thinly (center part and skin removed) - marinated in 1/2 teaspoon salt
4 eggs, beaten with chopsticks/ fork mixed with 1/2 teaspoon light soy sauce and 1 teaspoon oil

Method:

Firstly, heat up your wok until almost smoking.  Add about 3 tablespoons of oil and swirl to coat.  Turn heat to medium.  Add the bitter gourd and fry them quickly.  Pour in the beaten egg.  Fry till both sides are cooked and lightly browned (this is the way I like it but please adjust cooking times accordingly).
