Kolaches with Homemade Peach Vanilla Bean Jam
A few weeks ago I ran across a recipe for Peach Vanilla Bean Jam
on Annie's Eats. I told Jim about it and he came home with some
of the sweetest peaches I've ever seen. We made the jam that
weekend. We are weird that way, we love to can things as a couple.
That is weird. It sounds weird. Anyway, we try to can as often as
we are able. Our favorite things to give a nice hot water bath to are
pickles and jams.
Oh my gosh! The jam is amazing! The vanilla bean gave it such
depth of flavor! When I got the urge to make some homemade
kolaches this week I knew this would be a match made in heaven.
1 (.25 oz.) envelope fast acting dry yeast
1 cup warm milk
1/3 cup granulated sugar
1 teaspoon salt
1/3 cup butter (melted and cooled)
1 egg, beaten
3 1/2 cups all-purpose flour
1/2 pint of your favorite preserves or jam
Cinnamon Streusel topping (recipe below)
Sprinkle yeast over the warm milk in a large bowl and let stand
until foamy. (About 5 minutes)

In a mixer with dough hook add the sugar, salt, butter, egg and
milk/yeast mixture. Slowly add the flour, a little at time until it
is completely mixed in and the dough pulls away from the sides
of the bowl.

Lightly flour countertop and knead the dough for 5 minutes.
Spray a large bowl with non-stick cooking spray and cover
with plastic wrap and a kitchen towel.

Place in a warm, draft free place and let double in size, approx.

Roll out dough onto a lightly floured surface and using a knife
divide dough into 16 equal portions.

Roll portions into balls and place on a greased baking sheet.
With your fingers make an indention in the middle of each ball
of dough. Fill with a heaping teaspoon of preserves. Sprinkle
cinnamon streusel mixture on top of each kolache.

Cover with plastic wrap and a kitchen towel and let rise again
for 30 minutes.

Cook in a preheated 375 degree oven for 20 minutes or until
golden brown.

Makes 16 kolaches.

1/4 cup all-purpose flour

2 tablespoons melted butter
Combine all ingredients and sprinkle on top of kolaches.

This dough is a dream! It works up so beautifully! I am going
to try all different kinds of recipes with it, cinnamon rolls, clover
leaf rolls and even pizza. I'll let you know how it goes.........
My daughter Bay was my "kneader" today. She did a great job.
Even she was impressed by the quality of the dough. It's amazingly
easy to work with! Bay was having so much fun she asked me to
make another batch so she could knead that one too! That's how I
ended up with 20 peach kolaches and 12 sausage pepper jack kolaches.
I used some of the dough to make Jimmy some sausage pepper jack
cheese kolaches. They were fun to make and really tasty! Now I'm
thinking this dough would be great for bierocks and maybe stuffed
with barbecue. Hmmm... One thing I do know.........this is my "go to"
dough from now on!
