Greek Pizza
Friday night I was in the mood for an Gyro but Friday's are normally Pizza nights at our house. Well, I can solve that little problem. Greek Pizzas!!!!!!!! Jim had gone around the corner and picked me up a 1/2 pound of Gryo meat and some Tzatziki sauce from our little Greek place down the street so I was well prepared.
I have to say they were great! Bay and I even had a piece cold for breakfast this morning. I know some people don't like that. Some people gross out even more when I tell them how good cold pizza goes with hot coffee. I know, I know......ewww. I'm just weird enough to think it makes sense. As my dear Florida mom would say.........we had the breakfast of champions! That's basically anything not considered normal breakfast fare.
Greek Pizzas
2 prepared pizza crusts
5-6 tablespoons olive oil
2 tsp. garlic, minced
1/2 teaspoon oregano
1 (16 oz) Mozzarella cheese, shredded
1/2 lb. Gyro meat
2 (2.25 oz) cans black olives
1 (14 oz) can small artichoke hearts
1/2 red onion, minced
feta cheese
2 garlic bulbs, roasted
1/8 cup roasted red peppers, chopped
Tzatziki sauce (optional)
Preheat oven to 425.
Mix olive oil, garlic and oregano. Spread mixture on both prepared pizza crusts.
Spread mozzarella over the sauce. Top with the remaining ingredients in order given,
except the Tzatziki sauce.
Bake for 10-15 minutes or until golden brown.
Top with Tzatziki sauce.
Tanner was home from college this weekend. I just KNEW he would be crazy about this pizza. Well, promptly came home and went to dinner with his friends. Okay.....no problem. I saved him a couple of pieces for a late night snack. I get a text. Staying the night. See you in the morning, love you, Tanner. Oh well..........more for me! I'm thinking it would make a great treat during the movie tonight with a glass of wine. Yep....there's a plan!
