Buffalo Chicken Pasta Salad
It is so hot in Oklahoma! Last week this was the 7 day forecast! Can you believe it? I seriously think we live in hell.....
One way I've been beating the heat is to make cold pasta salads for dinner. A few weeks ago I posted my Mediterranean Tuna Pasta Salad and now I've got a new Buffalo Chicken Pasta Salad. It's absolutely yummy and very addictive! I like to pour some extra buffalo sauce on top before serving to
kick up the spice even more. To make it even more special you can sprinkle some crumbled blue cheese chunks on top. You will like it so much you will be fighting over the leftovers like my husband and I did. Sadly, I have to report that he won......(insert sad face here).
16 oz. pasta, shape of your choice
1/2 cup mayonnaise
1 cup chunky blue cheese dressing
1/2 cup buffalo wing sauce
Rotisserie Chicken, deboned and chopped
Red onion, chopped
Celery, chopped
Black olives, sliced
Black pepper, to taste
In a large pot bring water to a boil and cook pasta according to package
directions.
In a large bowl mix pasta, chicken, red onion, celery and black olives.
In a small bowl, whisk together mayo, blue cheese dressing and buffalo sauce
and black pepper.
Pour mayo mixture over pasta mixture and stir till combined.
Refrigerate until chilled or overnight.
