Grilled Cheese with Pesto, Red Onion and Bacon with Sweet Potato Chips
For those of you who didn't know...April is National Grilled Cheese Month.
It seems I made it just under the wire for my version of this classic sandwich!
I knew I wanted to use pesto in my sandwich as all of my family......everyone
(including my pups).....are a pesto lovers. I was looking in the fridge, thinking
to pair a roasted red peppers with the cheese and pesto but wouldn't you
know........the last of my peppers went bad. Oh well........not to worry! I found
that we had some BACON! uh huh........I said it.......Bacon!!!!!!
Well, the combo of Sourdough bread, pesto, bacon, red onion and sharp
cheddar was just amazing! Bay came in and asked for another one. I told
her I thought one was more than enough but I would make them again soon.
I'm sorta excited about the prospect myself!
I decided to make some sweet potato chips to go with the sandwich. I just
used my mandolin and cut the colorful disks, added a couple of tablespoons
of olive oil and a couple of tablespoons of sugar, a tablespoon of salt and
garam masala and baked for 15 minutes, turned them over and baked for 15
more at 450 degrees.
You don't have to use garam masala, you could use any spices you like.
For instance, Cajun seasoning, Chipotle powder or even Chinese Five spice.
The Cajun seasoning and Chipotle powder give the chips a nice little kick of
heat that's just amazing!
There is also a side benefit from making these chips. Your house will smell
amazing! Tanner came in the house after school and said "Something
smells great"!
I just grinned and handed him a chip. ;)
