Bill Granger's "Valentine" Chicken Stir fry



For our Valentine dinner I wanted to try Bill Granger's Chicken Stir fry
I swear the more of Bill's recipes I try the more I want to go out and buy 
every cookbook he has ever written.  He has such a fresh casual way 
with food.  I love his style!  

I adore all the fresh veggies in this dish.  I did make chopping a little 
harder on myself though by cutting heart shapes out of the red peppers 
but it did make the meal a little more Valentine-y.  The sauce is great 
and calls for Ketjap Manis (an Indonesian soy sauce) which not everyone 
has in their pantry but more than likely you have everything to make it 
yourself at home.  So no worries........



Ketjap Manis


1 cup dark brown sugar
1 cup water
1 cup soy sauce
7 tablespoons molasses
1 teaspoon grated fresh ginger
1/2 teaspoon ground coriander
1/2 teaspoon fresh ground black pepper

Combine sugar and water and boil for approx. 6 minutes.  Reduce to 
low and add remaining ingredients and simmer for a few minutes.

This will keep tightly covered in the fridge for 2-3 months. 




Valentine's day is so special to Jim and I..........  twenty two years ago 
tonight Jimmy asked me to marry him.  


 I'm so glad I said YES!
