Taco Ramen
This is a fun quick weeknight meal that kids love!
My kids aren't small anymore......I have one in college, a senior in
high school and one in her last year of elementary school. They all
love this dish and grin every time I set it in front of them. You can't
help but grin.........hey.....it looks like a sunflower.....tastes like a taco
and has everyones favorite..... ramen noodles. What's not to love?
Taco Ramen

1 lb. ground beef
taco seasoning mix (click for my taco seasoning recipe)
4 pkgs. ramen noodles (throw away the seasoning packet)
1/2 cup salsa verde (more to taste)
1 (4.25 oz) can chopped black olives
1 cup sharp cheddar, shredded
toasted corn flavor dorito chips
sour cream (optional)
In a large skillet fry ground beef until no longer pink. Add taco seasoning
mix and 1 cup of water; simmer while cooking the noodles.
In a large pot add noodles to boiling water and cook for 3 minutes. Drain
and add to the ground beef mixture.
Pour in salsa verde and black olives and stir. Top with cheddar cheese
and when melted put on a plate and surround with dorito chips to look like
a large sunflower.
I have to say that I am a ramen freak! If I could eat a kimchi noodle bowl
everyday without dying from too much sodium I probably would. As it is I eat
one at least once a week at work. I do something you will probably think is
really gross......I like to put a couple of cheddar cheese chunks down in the
broth. It melts and gets the noodles all cheesy with the spicy broth.....
I know.....I'm weird....... but is sooooooo good!
