Fridge Cleanout Chicken Tortilla Soup Inspired Soup
It's not exactly soup weather here in sunny San Diego today, but stuff's gotta get used up before it starts getting slimy.
The last 1.5 carrots, the last 1/2 white onion, the last 1/2 zucchini, the last 1/4 cauliflower, the last 1/3 container of arugula, the last 1/3 of a green bell pepper, the last 1/3 of a yellow bell pepper, a few loose garlic cloves, the last wrinkly tomato, 3 boneless, skinless chicken thighs, bay, oregano, cumin and lime.
The produce drawer is starting to look a little less like a compost pile now...
