Basil Walnut Pesto

Still got lots of sweet basil growing in the garden, so I'm making a batch of this Basil Walnut Pesto for all kinds of applications. Goes without saying on pasta, but it's also delicious whipped into butter and cream cheese, mixed with hummus or mayo, as a pizza spread, and also as a base for delicious salad dressing.
You can use other nuts (pine nuts, obviously), but almonds, cashews, and pecans are also delicious.
Basil Walnut Pesto
Makes about 1 cup
Time: 15 minutes

- 2 generous cups of packed sweet basil
- 1/2 cup walnuts (raw or toasted is fine - just depends on your preference)
- 1/4 cup grated Parmesan cheese
- 1/4 cup grated Pecorino
- 2 large cloves garlic, peeled
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon kosher salt
1. Whiz basil, nuts, and garlic in food processor until they make a coarse paste.
2. Add in the cheese and oil and whiz a few seconds longer until completely incorporated.
That's it. Enjoy! :)
