Happy New Year! How hard was it to go back to work after having that week long vacation? It's never enough when it comes to having free time during the holidays to spend time with friends and family, but c'est la vie, right?
It's still a bit cold to be out and about, so hosting a Game Night (board night, sports games, you name it) is a fun alternative. What’s our favourite game? Scrabble!

This time, we went off the beaten path for another crowd-pleaser in addition to the steak tacos and nachos that we served. Check out our Mexicana Toast and Mexican Street Corn recipes below.
Mexicana Toast with Refried Beans
Green pepper, sliced
Red onion, sliced
Mushrooms, sliced
Cheddar cheese, shredded (optional)
Salsa (optional)
1 Egg
Sliced of bread
1. Heat up the refried beans in a small pot over medium-high heat until hot
2. Cook the sliced green pepper and red onion with olive oil until soft. Then add mushrooms
3. Cook the egg over medium/low heat for the perfect sunny-side-up
4. Toast a slice of bread of your choice.
5. Spread the Old El Paso Refried Black-Beans on toast, top with veggies (add salsa to taste), cheese, and sunny-side-up egg
Mexican Street Corn
Corn on the cob
Green onion, chopped
Olive oil
Mayo
Garlic powder
Chilli powder
Pepper
1. Grill the corn with oil on stove top over medium heat
2. In a bowl, combine mayo, garlic powder, chilli powder , Old El Paso Seasoning Mix and pepper together; add green onion
3. Once the corn is cooked, brush on the mixture and serve!
Shrimp with Old El Paso Mild Seasoning |
Stir-fried Shrimp
Peeled or Unpeeled medium sized Shrimp
Old El Paso Mild Seasoning
Garlic, chopped
Pepper
Vegetable oil
1. Defrost frozen shrimp by placing in a bowl under cold, running water. Once it's soft to the touch, drain and place in a bowl with paper towel to soak the moisture
2. Meanwhile, on a pan, heat vegetable oil on medium/high heat
3. Place chopped garlic on the pan, cook for a few minutes and add the shrimp
4. Add the Old El Paso Mild Seasoning and a bit of water (not too much - just enough to sizzle)
5. Once the shrimp is fully cooked, remove from heat & serve!
Our favourite was the Mexican Style Corn - it was super easy to make and so delicious. There's no need to pay premium to get those at taco-joints!
