Macaroni (pasta) Salad Recipe (Vegetarian)

Here's an easy one! A little tart, a little sweet and always yummy - today's feature is an easy pasta salad.  All you need is some pasta of your choice, protein (if you like) and some cubed vegetables.  I used some frozen sweet corn I had on hand.  Add a splash of good white vinegar and a tiny bit of sugar plus light mayonnaise.  You're done!

Ingredients:

1/2 cup macaroni (cook according to package instructions)
3-4 tablespoons light mayonnaise
1/4 cup sweet corn
Splash of white vinegar (I used Yuen Chun's)
1 teaspoon sugar (optional)

Place the cooked pasta together with other ingredients in a large bowl for tossing.  Add mayonnaise, vinegar and sugar.  Toss to coat well.  Add more vinegar if required.
