Beef Stew Recipe
There's nothing more heartwarming than a bowl of hot beef stew on a rainy Sunday afternoon. This was actually requested so as I have never made beef stew so I thought why not. This is a modified recipe of Jamie Oliver's but I did not use the oven or even a Dutch oven. I merely cooked it over the stove but the flavours were still deep and delicious. I used steak for stewing and plenty of vegetables. The recipe calls for artichokes and squash but as they are hard to find here, I skipped them.
This is great served with crusty bread or even rice.
Ingredients:
1 stewing steak, cubed (dusted in flour)
2 small carrots, sliced
2 small potatoes, sliced
1 onion, sliced
Bunch of button mushrooms
1 bunch of celery, sliced
2 tablespoons tomato puree
1 cup beef stock
1 cup sparkling grape juice or red wine
Bundle of rosemary
1 tablespoon olive oil
1 knob butter
Method:
Firstly, add the olive oil and butter in a suitable casserole pot. Add onions and fry for a bit. Add steak. Add in all vegetables, mushrooms and tomato puree. Add grape juice and beef stock. Bring to a boil. Turn heat to low and allow to simmer for about 40 minutes. Serve with rosemary on top.
