Blueberry Belgium Waffles


Last October we took a road trip to New Mexico to visit our friends Carole and Edana. On our way there we stopped for lunch in Amarillo and decided against the standard burger and fries.  Instead we opted for a late breakfast at Waffle House.  I know, I know...... but they really do know how to make a mean waffle!   Jimmy ordered a regular waffle and bacon and proceeded to do this to it........


Those of you who are "Breaking Bad" fans will get a kick out of this. In fact we had quite a "Breaking Bad" weekend as you will see..........  






We spotted "Flynn's car" in the Waffle House parking lot.  We we stopped by Walt's house in Albuquerque and we even had a burrito at Los Pollos Hermanos!  




Here are Bay and I with our dear friend Carole....  we were in our jammies balloon chasing before breakfast!  It was one of those spontaneous decisions that ended up being one of the highlights of the trip. If you look closely you can see all the dots behind our heads.....those are thousands of hot air balloons flying over the Rio Grande!  It was an amazing sight and one I will never forget!



Okay..... now back to the waffles.  Bay and I ordered the blueberry waffle and both of us loved it and have been trying to re-create it at home.  I even tried the copycat Waffle House version but for all the work involved......it just didn't float our boat.  Here is the recipe that I think is just as good as the "WH" if not better...it's our favorite anyway!
   

Blueberry Belgium Waffles



2 cups all-purpose Flour
¾ cup sugar
3 ½ teaspoons baking powder
2 eggs , separated
1 ½ cups milk
1 cup butter, melted  *(I usually don't use quite this much...  more like 3/4 cup)
1 teaspoon vanilla extract
½ cup fresh or frozen blueberries
Syrup

In a bowl, combine flour, sugar and baking powder. 
In another bowl, lightly beat egg yolks and add milk, butter and vanilla; mix well.
Stir into the dry ingredients until just combined. 
Beat egg whites until stiff peaks form and fold into batter.
Gently fold in blueberries.

Bake in a preheated waffle iron until golden brown.  Serve with Syrup.
