Easy Stir-fried Beef Kuey Teow (Flat Rice Noodles) Recipe

Everyone, well almost everyone loves the ever popular beef kuey teow (flat rice noodles) dish right? My preference is for the dry version - a staple of Hong Kong hawker food fare.  Well, instead of trying to re-create the famous dish at home, I opted for an easier version with less emphasis on the ubiquitous wok breath ('wok hei').  Anyway, I made do with the ingredients I had on hand which were beef (of course!), flat noodles, cabbage, garlic (one of my least favourite things in the kitchen is peeling garlic) and topped everything off with some freshly made sambal (chili paste) that the bf made.

Alternatively, you can add chives or green onions if you have them available instead of the cabbage I used. This was something very quick and easy that I whipped up and I hope that you will get some inspiration to cook from this - it doesn't always have to be a major production for a satisfying meal at home!

For a simple dish with minimal ingredients like this one, it is quite essential to use good quality soy sauce.  As usual, I used my sauces from Yuen Chun.  This post is a part of my Yuen Chun Recipes, an ongoing project on Smoky Wok.

Serves 2

Ingredients:
2 packets of dried kuey teow (you can use fresh ones - around 500g) - cooked according to package instructions
1 steak (I used sirloin), sliced into strips, or alternatively buy beef strips 
4 cloves garlic, sliced
1/2 head cabbage, sliced
3 slices young ginger

Sauce: (Mix in a bowl and do a taste test)
1 tablespoon thick caramel sauce
2-3 tablespoons light soy sauce
Dash of sesame oil
1/2 teaspoon sugar (or to taste)
Dash of white pepper

Method:

Firstly, cook the flat noodles according to package instructions.  Set aside.  Heat up your wok until almost smoking.  Add 3 tablespoons oil. Swirl to coat.  Turn heat to medium and add garlic and ginger.  Once fragrant, add beef strips.  Cook until 1/3 cooked.  Add in cabbage, then sauce mixture.  Quickly add in the cooked noodles and stir everything well to get the ingredients coated in the mixture.  Add a few teaspoons of water if dry.

This dish is pretty quick as beef cooks quite easily compared to other kinds of meat.  Serve hot.
