State Fair Inspired Homemade Corn Dogs



Sunday was the last day of the State Fair here in Oklahoma and being that it was a beautiful day we all piled in the car and went.  We walked around a bit before deciding what calorie laden treats we wanted.  Isn't there something about the Fair that just makes you feel like a kid again?  The sights, sounds and smells....amazing!  I love it and especially the food!   The one thing I always get every year is the Dan's Famous Indian Taco.  Unless you make one at home like my Indian Taco with Cheddar-Jalapeno Waffles they are hard to find in a restaurant.  Jim always gets a pork sandwich (boring but good), roasted corn and a nutty bar.  I wanted a corn dog all day but didn't end up getting one.  I whined about it on the way home and Jim said....let's just make some for dinner.  Brilliant!






Part of the fun is checking out all the weird food oddity's.  I took a few pics below to show you what I mean....




There's everything from beer battered bacon to deep fried oreos, twinkies and snickers!  I really should have tried some....  Did you know that the Oklahoma State Fair has 3 different kinds of Corn Dogs?  Regular, Poncho Dogs (made with a sweeter and fluffier batter) and the Waffle Dog (made with Waffle batter).

State Fair Inspired Homemade Corn Dogs


1 1/2 cups flour
2/3 cups sugar
1/2 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups milk
2 large eggs, lightly beaten
1/3 cup oil
3 tablespoons butter, melted
1/2 teaspoon Coleman's dry mustard
1/8 tsp. cayenne pepper
Hot Dogs of your choice
Wooden Skinny Sticks
1 (48 oz) bottle of Canola Oil (for frying)

Combine flour, sugar, corn meal, baking powder, salt, dry mustard and cayenne in a medium bowl.  

Combine milk, eggs, oil and butter in a small bowl and mix well.  

Add milk mixture to the flour mixture and stir just until blended.

Pour bottle of oil in a dutch oven and begin to heat to approximately 370 degrees over medium heat.  

Pour some of the cornmeal meal mixture into a tall narrow glass.  

Push sticks into one end of the hot dogs leaving enough to grab the end.  

Dry off hot dogs with a paper towel and dip into the glass of cornmeal mix.

Put into hot oil and turn over until it is a nice golden color.  Take out and let drain on a plate covered in paper towels.  

Repeat process until all the corn dogs are made putting no more than two at a time in the oil.



These sticks work perfectly for making homemade corn dogs.  I found them in the craft section at Walmart.




Can't believe we have to wait a whole year for the Fair to roll around again.....  Well, now that I've perfected the corn dog I can have a little taste of it any time I want!  Now.....on to perfect something else fried and on a stick!
