Thin and Crispy Roti 'Pizza' Recipe

Whenever I order pizza, I always prefer the thin crusted variety - hence I thought of using roti paratha or roti canai, the ever-popular Indian flatbread as a base for a Thai flavoured pizza.  This is so easy that it's hardly a recipe and is more of an idea as you can play around with toppings of your choice or even the sauce.  For today, I used one of my favourite sauces from Yuen Chun that is always handy for a taste of Thai.  This is extremely quick and easy plus of course delicious and looks quite impressive in my opinion.  All you need are some toppings, mozzarella and of course some roti paratha.

I used frozen rotis - very accessible even if you live outside of Asia, most Asian grocery stores will have some of these in frozen form.  If you like, you can substitute the roti with other flatbreads like naan or pita bread.  I do hope you'll give this a try soon and have a great week ahead!

Ingredients:

4 pieces roti paratha/ canai (cook according to package instructions)
4 frankfurters/ bacon/ ham (sliced)
4 tablespoons Thai sauce (I used Yuen Chun)
200g mozzarella cheese (shredded)

Method:

Firstly, pre-heat the oven at 150 C.  Cook the rotis according to package instructions which is usually pan-frying them till cooked.  Once cooked, they should puff up a little. 

Assemble the 'pizzas' by first spreading the Thai sauce, scatter with the slices of frankfurters and cheese.

Bake for about 10 minutes or until cheese has melted.  Serve hot.
