Easy Weeknight Taco Stuffed Peppers
I'm always trying to come up with good weeknight dinners
that are both fast and easy. My family loves this one. Jim
says it reminds him of a sheperds pie in a green pepper.
Pre-made mashed potatoes are the key to making it super
speedy.
Easy Weeknight Taco Stuffed Peppers
3 green peppers
1 1/2 lbs. ground beef
12 oz beer
pre-made mashed pototoes
(I used Bob Evans Sour cream and chive)
Sharp Cheddar cheese, shredded
green onions (for garnish)
Cook ground beef until no longer pink and add the taco
seasoning and beer. Simmer until most of the liquid is
gone.
While ground beef is simmering cut the green peppers
down the middle and put in a microwave safe dish with
1/2 cup of water. Microwave for about 4 minutes; drain
and put in a casserole dish sprayed with non-stick cooking
spray.
After the liquid has absorbed out of the pan of meat spoon
into peppers.
Top with mashed potatoes, cheese and green onions.
Bake at 350 degrees about 20 minutes or until warmed through.
I use my homemade taco seasoning and add a bit more
cayenne and beer instead of water in the meat mixture.
Anything to kick up the flavor!
We enjoyed ours while watching Phantom of the Opera.
I'm really into West End theatre and Bay seems to enjoy
it as well. Now...what to cook tomorrow while we watch
