Tailgating at Oklahoma State University
Yesterday we met some of our best friends Kevin and
Jennifer in Stillwater to tailgate with my boys. Both Tyler
and Tanner attend Oklahoma State and were really anxious
to show them around the campus. Luckily we gave Ty and
Tan our tent to set up on Friday afternoon so we got a great
spot! We were right on Hester street which is the street the
band, players and cheerleaders make their procession to the
stadium.
We brought lots of good food and I had to bring my famous
cheese ball. It's one of Kevin and Jennifer's favorites! I have
been making it since I was a young girl. It's the only cheese
ball I ever make. It's so good and very additive!
Pineapple and Pecan Cheese Ball
16 oz cream cheese, softened
1 (8 oz) can crushed pineapple, drained well
1 tsp. season salt
2 tbsp. onions, minced
2 tbsp. green pepper, minced
1 cup cheddar cheese, shredded
2 cups pecans, finely chopped (divided)
Mix all ingredients except 1 1/2 cups chopped pecans until thoroughly combined.
With plastic wrap form mixture in a ball. Wrap it up and refridgerate until hardened.
Remove from the fridge and roll in remaining pecans.
Serve with assorted crackers.
For Jim's birthday I got him a slider press and basket
from Williams-Sonoma so he could make sliders on the
grill. It worked great! Everyone who walked by were
really impressed. We mixed barbecue sauce in the meat
and served them up on Hawaiian buns with slices of red
onion and my "wicked pickles". Jennifer said she thought
my pickles were actually better than the real version!
Jennifer gave both the boys an OSU gift basket. It had a
variety of goodies init such as chocolates, a coffee mug,
a cling OSU sticker and popcorn and nuts too! The boys
loved them! Thanks Jennifer you are the sweetest!!!!!
The little kids had a great time playing tailgating games and
they especially loved the food! The biggest hit were the little
owl smores I made. Everyone got a laugh out of them and
the board Jim made that said "Whooo's gonna win?"

Graham Crackers
Marshmallows
Yellow Candy Disks
Chocolate Chips
Candy Corn
Cut marshmallow in half and put both sides down on a graham cracker
square.
Put yellow candy disk on top of marshmallows.
Wedge candy corn under the marshmallows to make the beak.
Microwave for around 10 seconds or until marshmallows puff up.
Take out of the microwave and add chocolate chip on top of the yellow candy.
Cool and everything should stick together nicely.

Justin Blackmon in the front and right behind him is
Coach Gundy. We had a fabulous time and it doesn't
hurt that we beat Kansas 70-28!! Orange Power!
