Apple Bread with Cinnamon, Brown Sugar and Walnut Topping




I love quick breads especially in the Fall.  There's 
something very comforting about eating a piece of 
cinnamon-y Apple bread with a hot cup of coffee 
when the weather outside is turning colder.  This 
week at IHCC the theme is "Harvest Moon Foods 
Celebrating Fall's Bounty/Halloween themed foods" 
out of any Tessa Kiros cookbook.




I picked this apple bread with cinnamon, brown sugar 
and walnut topping.  This bread was a little different
than others I've made in the past.  It had the addition
of ground cardamom that gave it a wonderfully
warm addictive flavor.




                            Apple Bread with Cinnamon Sugar Topping

¾ cups sugar (scant)
1 stick plus 3 tbsp. butter, softened
2 eggs
1 cup all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
½ tsp. ground cardamom
½ tsp. ground cinnamon
a pinch of salt
2 apples, peeled, cored and coarsely grated
2/3 cup walnuts, lightly toasted and coarsely chopped
1 tsp. vanilla extract

Topping

2/3 cup walnuts, finely chopped
1/3 cup lightly packed brown sugar
1 tsp. ground cinnamon

Preheat oven to 350 degrees.

Grease and flour a loaf pan.  Mix together the sugar and butter until light and fluffy.
Add the eggs, stirring well to combine.

Sift the flour, baking soda, baking powder, cardamom, and cinnamon together and
add the pinch of salt.   Mix to combine. 

Add in the apples, walnuts and vanilla, stirring well.  Pour mixture into the loaf pan.

Mix topping ingredients together and sprinkle on top of loaf pan mixture. 

Bake for 45 minutes or until a cake tester  poked in the middle comes out clean.


I say addictive because Bay and I had a slice warm from
the oven for breakfast on Saturday morning......but I found
myself going back and nibbling on it some more.  I had
to put foil on it and push it to the back of the counter to
get myself to stop!

thankful to IHCC for helping me make the time to try some
of these wonderful recipes.  Go over to where you keep
