Ahi Tuna Burgers with Asian Mayo, Arugula, Crispy Shallots and Pickled Ginger with Sweet Potato Fries



For Mother's Day this year I received the cookbook "My Father's 
Daughter" by Gwyneth Paltrow and I've been eyeing this recipe 
since May and finally got around to making it today.  I had to make 
a special trip over to my favorite fish  market because I wanted to 
use the best quality ahi  tuna.  You guys........it was totally worth the 
trip across town!






The only thing I added to the recipe was the beni shoga red pickled 
ginger to the top.  I just love the stuff and it went amazingly well with 
the other flavors and the Asian mayo.  Plus I adore that pop of red 
color on top!
Ahi Tuna Burgers

1 tsp. wasabi powder
2 tsps. dijon mustard
1 teaspoon water
1/2 teaspoon freshly ground pepper
1/2 teaspoon coarse salt
1 tbsp. fresh ginger, minced
1 tbsp. garlic, minced
1 1/2 tbsp. peanut oil (plus more for cooking)
1 lb. highest quality tuna, cut into 1" pieces
2 tbsp. extra virgin olive oil
3 shallots, peeled and thinly sliced
4 hamburger buns
1/2 cup soy mayo (recipe follows)

Combine the wasabi, mustard, and water in a small bowl.  Scrape
it into a food processor along with the pepper, salt, ginger, garlic
and peanut oil.  
Pulse it a couple of times to make a paste.  Add the tuna and pulse
a few times being very careful not to over-process the tuna too much
so the burgers have a good texture.  
Form 4 patties out of the mixture and set in the fridge to let the 
flavors develop.  (at lealst 1 hour up to overnight)
In the mean time, heat the olive oil in a skillet and add the shallots
and saute for about 10 minutes over medium high heat.  They 
should get soft, sweet and a little brown.  Reserve for topping.

Preheat your grill.  Rub the tuna patties with some peanut oil and
grill for about 3 minutes a side or to desired doneness.   Heat buns
next to the burgers.  
Spread the buns with the Asian mayo and top burgers with arugula,
shallots and beni shoga pickled ginger.
Asian Mayo
1/2 cup mayonnaise
2 tsp. soy sauce
2 tsp. sesame oil
Mix together well.




Most importantly they were absolutely delicious!  I had all the kids 
home from college this weekend and they all loved these burgers.
I told Jim that I'm definitely making these next time we have 
friends over for dinner.  My friends will love the amazing punch of 
flavor, not to mention how impressive they are! 

I'm so glad my kids got me this cookbook to add to my collection.  
There are lots of beautiful pictures and some wonderful recipes.  
I know there are quite a few more I'm putting on my calendar 
to make very soon.  There are also some very touching memories
and photos of her late father Bruce Paltrow, along with other 
family stories.  What can I say......not only can the girl act and sing 
but she's obviously a great cook too!
