Cornmeal Crusted Cherry Tart
This morning I wanted to make something special for my daughter Bay. She and I were the only ones at home. Jim and Ty had to work and Tan was spending the night at a friends house. I know Bay loves cherries and luckily I had a can of cherry pie filling on hand. I had to make something up that used stuff in my pantry because we haven't been to the grocery store yet this week. This is what I came up with.
1 cup flour
3/4 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup sugar
1/2 cup vegetable oil
1/2 cup buttermilk
2 tablespoons sour cream
1 egg
Cherry pie filling
Icing
1 cup powdered sugar
1 tablespoon milk (more if necessary)
1/4 teaspoon vanilla or almond extract
Preheat oven to 400 degrees.
In a large bowl, mix the flour, cornmeal, baking powder, baking soda and sugar.
In a measuring cup, pour in the buttermilk and oil, whisk in the egg and sour cream.
Stir the buttermilk mixture into the bowl of dry ingredients.
Spread the batter in a tart tin or another small pan and top with cherry pie filling.
Bake for 20-30 minutes depending on your pan. It should be golden brown and a cake tester should come out clean. Let cool.
Mix icing ingredients in a small bowl and drizzle on top of tart after it has cooled.
She loved it and I did too! It was heavenly with a hot cup of coffee! So far it's been a great day! After this yummy breakfast Bay and I went swimming and laid out for a little while. Now all they boys in the family are starting to head home from work and play. I bet they wish they would have been here for breakfast......but we did save them some!
