Mediterranean Tuna Pasta Salad
I have been looking for a great tuna pasta salad recipe for years!
I'm not joking........ I think my obsession all started when my boys
were little and we would take them to Chuck E. Cheese. They had
a tuna pasta salad on their salad bar that would make me want to
take the boys there way more than was necessary. While everyone
else had their plate piled high with pizza, I would have a giant blob
of tuna pasta salad and crackers.
Over the years I've tried all kinds of different recipes and ingredients
and nothing I tried would turn out quite like I was hoping. Then I found
made it as a sandwich. I could tell right away that it would be awesome
with some pasta added to it for a light, cold summer supper. It is amazing,
even better than that mouse place. Now I'm thinking.......Chuck E. Who?
Mediterranean Tuna Pasta Salad
adapted from Whole Foods Cookbook
4 (6 oz) cans albacore tuna in water, drained
1 (14 oz) can artichoke hearts, drained and quartered
1/4 cup roasted red pepper, chopped
1 (4 oz) can black olives, sliced
1/2 small red onion, minced
1/4 cup Italian parsley, minced
1/4 cup fresh basil, minced
2 garlic cloves, minced
1 teaspoon dried oregano
1 cup light mayonnaise
2 tablespoons fresh lemon juice
fresh ground pepper
1 (16 oz) pkg. bowtie pasta (or the shape of your choice),
cooked and drained
Combine all ingredients and chill in the fridge at least a
couple of hours or overnight.
What's awesome is that ALL my kids LOVED it, including my husband Jim.
That night we had Jim's cousin Brent over for dinner too. I love his remark.......
