First I'd like to wish my husband a Happy Father's day! You areare a wonderful husband and an amazing Dad! Thank you for all you do for us. We love you very much..... I'd also like to send out a Happy Father's Day shout out to my Dad who lives in Florida. I wish I could have made you breakfast as well!
I was wanting to make Jim something different and very flavorful on his special day. Eggs Bhurji which are basically Indian scrambled eggs was the first thing that came to mind. They are quite similar to regular scrambled eggs the only difference is the addition of onions, spices, chilies, garlic and ginger which make them very fragrant and delicious. There is a little prep work involved. Luckily, I thought aheadand did my chopping the night before so it came together really fast in the morning!
Eggs Bhurji

3 eggs, well beaten1 tablespoon oil1/4 medium red onion, finely chopped1/2 tsp. garlic, minced1/2 tsp. ginger, grated1/2 jalapeno pepper, minced1 tomato or 1 roasted red pepper, chopped2 tablespoons cilantro, chopped1/4 tsp. coriander powder1/4 tsp. garam masala powder1/4 tsp. cumin1/8 tsp. turmericred chili powder, to tastesalt, to taste
Heat a skillet over med-high heat and add oil, turmeric and onions. Saute for 2-3 minutes.Add garlic, ginger and jalapeno pepper. Saute for a minute and add red pepper (or tomato).Cook for a couple of minutes and add cilantro and powders. Stir well to combine and add the eggs. Stir constantly until done to your liking.
This mixture is also fantastic to serve inside a flour tortilla with some cheese and salsa for a new Indian spin on a breakfast burrito. It's probably my favorite way to serve them! In fact, I made extra just so we could have Egg Bhurji burritos tomorrow morning! No hum drum Monday for us!
