Pesto Pasta with Mushrooms, Onions and Roasted Red Peppers
Pesto is one of my very favorite flavors in the world! I can't wait until
summer to see my garden overflow with those beautiful basil plants.
Until then I had to use some store bought Pesto but....no worries.......
it's great in a pinch!
This is a fabulous meal for working moms. It's so fast to put together
and tasty enough for company. I made mine vegetarian but you can
add chicken or shrimp as well. Tonight I just enjoyed focusing on the
flavors of the caramelized onions, mushrooms
and peppers. This pasta is pretty filling and feeds 4 people with HUGE
appetites or 6 normal ones. I served ours with a French baguette and
Caesar salad.
Jimmy and the kids loved it! I think everyone had seconds! Once Ty
is home from college I'm going to have to make this for him and Cassie.
They both love Italian food and Pesto is at the top of the list! They will
think I slaved all day......... yeah....let them think that......... ;)
Pesto Pasta with Mushrooms, Onions and Roasted Red Pepper
16 oz bow tie pasta
2 tablespoons olive oil
1 onion, slivered
1 roasted red pepper, chopped
16 oz fresh mushrooms, sliced
1 teaspoon garlic, chopped
7 oz pesto sauce (can use more to taste)
Cook pasta according to package instructions.
Heat oil in a large skillet and saute onion slivers until they get some color.
Add the mushrooms , garlic and roasted red pepper and saute until tender.
Add cooked pasta and pesto sauce and combine well.
Jim and I have enough leftover for lunch tomorrow. It seems a little decadent to
have pesto on my lunch hour....... but I think I could get used to it.............
