Stained Glass Fruit Salad




Last weekend our close friends Kevin and Jennifer came for an 
overnight visit.  Their daughter Kenzie was in a dance competition 
here in town.  (They won 2nd place by the way!)  

Our families have a long friendship that started a couple of months 
after our daughter came home from Korea.  Both our families attended 
our adoption agencies Fall Festival that October 2000 and while Bay 
had come home in August, Kenzie hadn't come home yet.  Jennifer's 
mom Gayle approached us and told us that Bay looked a lot like their 
daughter still in Korea.  She wanted us to go over and meet them.  
Well......we have been close friends ever since.

Anyway............on Sunday morning Jimmy and I made them our 
Garlicky Parmesan Egg and Steak Biscuits and this fruit salad to 
go with it.  It was a big hit!  The nicest thing is that it's so easy to 
prepare and stays fresh for a couple of days.  The secret ingredient
is peach pie filling.  The pie filling coats all the other fruits and 
makes a sauce that's just sweet enough but not too sweet,  Easy 
peasy!



Stained Glass Fruit Salad

(printable copy) 



1 (16 oz) bag frozen strawberries, halved
1 (16 oz) can pineapple chunks, drained
1 (11 oz) can mandarin oranges, drained
1 (20 oz) can peach pie filling
3 bananas, sliced

Mix all ingredients together and chill.


We had so much fun last weekend!  I really enjoy planning meals 
and cooking for my friends.  I'm already getting another menu together 
for next months visit!!!!
