Thai Yellow Curry Coconut Chicken Soup



I have been seriously craving some curry!  This soup makes a wonderful filling, slightly spicy meal served along with some Naan to soak up all that curry goodness.  





Yellow curry paste combines the best of Thai food and the best of Indian food and it's really convenient to have in the fridge.  With flavors like lemongrass, garlic, kaffir lime peel, cumin, cinnamon, tumeric and cardamom you need just a few more ingredients you can have a really flavorful fast meal.


Thai Yellow Curry Coconut Chicken Soup

2 tablespoons Olive Oil
2 carrots, peeled and diced finely
1/2 onion, diced finely
1 red pepper, diced finely
1 cup cooked chicken, chopped or shredded
1 cup cooked rice
2 tablespoons, yellow curry paste (to taste)
3 tablespoons brown sugar
1 (13.5 oz) can coconut milk (unsweetened)
1 1/2 cans chicken broth (approx. 21 oz)
2 tablespoons fish sauce
Cilantro to garnish


In a dutch oven, heat oil over medium heat and cook onions, carrots 
and red pepper for around 5 minutes. 

Add curry paste, brown sugar, chicken, rice and fish sauce and stir 
until everything is well combined.

Pour chicken broth and coconut milk into the pan and stir.  

Reduce heat and cook for 15 to 20 minutes.  

Serve with cilantro garnish.
