Rainbow Sugar Cookies
My daughter Bay has been after me to make these cookies for
about a year. Yesterday we decided to enjoy a rare Saturday at
home and try it out. I'm glad we did because we had so much fun
making them!
You really need at least 6 colors of sugar to make it look like a
rainbow. I admit I could only find 4 colors our local market so I
sent my husband on an errand to Cherry's Sugar Art Bakery to
see what other colors they had. Success! He came home with pink
and purple!
Rainbow Sugar Cookies
2 cups butter, softened
2 1/2 cups sugar
3 egg yolks
1 large egg
1 tablespoon vanilla
1 teaspoon salt
5 1/4 cups all-purpose flour, sifted
6 (2.25 oz) sugar crystals, asst. colors
In a standing mixer, beat butter and sugar on high until light and
fluffy, about 3 minutes.

Add egg yolks, egg, vanilla, and salt, and beat well to combine.
With mixer on low gradually beat in flour.
Divide dough into 6 equal pieces on 6 different pieces of saran wrap.
Using saran wrap roll each piece into a log and chill for 20 minutes.
Working with 1 roll at a time, roll in 1 color of sugar crystals and
re-wrap in saran wrap.

Continue until all are rolled in a different color of sugar and wrapped.
Refrigerate 3 hours or overnight.
Heat oven to 350 degrees. Cut logs into 1/4 inch slices, and place on
a greased cookie sheet about 1/2 inch apart.

Bake 14 to 16 minutes or until golden. Repeat with remaining logs.
Makes about 12 dozen cookies.

Using saran wrap is a must! It really keeps your hands
clean and makes rolling the dough into logs very easy as Bay
demonstrates.
This recipe makes a lot of cookies! With Ty and his girlfriend
Cassie home from college, Tan with his best friend Matt spending t
he night and little Bay, I had a house full of kids! They all descended
on these cookies with a vengeance. There were only a few left this
morning when I woke up.
I used my Dr. Pepper crate to display my cookies. It turned out
so cute that Bay wants me to make another batch to take to her
school in March for her birthday. I think the kids will love 'em!
