Pantry Out......Lori's Party



My friend Lori had her annual Card Party last Sunday.  She makes the 
cutest vintage cards and other unique gift items.   Twice a year she has a 
party at her gorgeous 100 year old house in Oklahoma City.  Friends and 
family gather and ooh and aah over her amazing creations.  You can buy 
items from her parties or she has her cards it in a couple of stores around 
town.

Lori and her husband Dennis make the most amazing baked goods 
to share during her party.  This year they made Valentine Sugar Cookies, 
Oreo Cupcakes and Strawberry Fruit Tarts.  They have 
kindly offered to let me share these wonderful recipes with you guys 
and I have to tell you they are so good!  


Sugar Cookies

2/3 cup soft butter
3/4 cup sugar
1 egg
3/4 tsp vanilla
1/4 tsp almond extract

2 Cups Flour
1 1/2 tsp baking powder
1/4 tsp salt
4 tsp milk

Icing:  Combine powdered sugar, milk, a touch of melted butter and
almond extract to taste.  Should be runny enough to pour or brush on
the cookie.

Combine butter and sugar.  Add remaining ingredients to almond
extract.  Mix all dry ingredients.  Mix wet into dry ingredients.  Add milk
last.  Chill.  Bake at 375 degrees for 8 or 9 minutes. 

Can be cut off a log or use cookie cutter.  Make sure rolling pin and
surface are adequately floured.   These cookies are best iced.  Double
 recipe will make about 30 large hearts.

Oreo Cupcakes 

(adapted from My Baking Addiction)


1 (18.25 oz) pkg. devils food cake mix
1 (5.9 oz) pkg. instant chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 large eggs
1/2 cup warm water

Preheat oven to 350 degrees.  Line cupcake pans with paper cups.

In large bowl, sift together cake and pudding mixes.  Mix in sour cream, oil,
beaten eggs, and water until combined.

Bake for 20-24 minutes until tops spring back when touched and 
toothpick comes out clean.  Cool for 5 minutes before removing.

This recipe is supposed to make 30 cupcakes, but it only made 
25 for us.

Frosting:

2 sticks unsalted butter, room temp
1 cup shortening, room temp
1/8 tsp. salt
1 tablespoon vanilla extract
2 lbs. powdered sugar
4-6 tablespoons cold milk
8 crushed Oreos - remove filling first

Cream butter and shortening.  Add salt and vanilla, mix well.  

Sift in the powdered sugar in 4 parts, mix well after each addition.  

Next, add milk slowly, one tablespoon at a time, until desired consistency 
(may not need all of the milk).  Fold in crushed Oreos.  

Frost cooled cupcakes.

Strawberry Fruit Tart



Crust:
1 cup butter, softened
3/4 sugar
2 1/2 cups flour
1/3 cup milk

Filling:
8 oz pkg cream cheese, softened
1/2 cup sugar
1 tsp grated lemon peel
1 tbsp lemon juice

Heat oven to 400 degrees. 

In large bowl, beat butter and sugar at medium speed until  
well mixed.  Add flour and milk.  

Roll out and cut into fluted circles and place in muffin tins.  Tip:  
place a circle of parchment in the bottom of each tin for easy removal.  

Bake for 10 -12 minutes until lightly browned.  Cool and remove.  

Combine all filling ingredients, beat at medium speed until light and fluffy.  
Spoon into tart crusts.  

Chill 1 hour until firm - add sliced strawberry.  Brush entire tart with apple jelly.



Lori's 4th of July items are some of my personal favorites.
