Baked Taco Eggs
During the work week we eat on the run and don't take time for a nice breakfast........so on the weekend we like to slow down and enjoy the most important meal of the day.
Baked Taco Eggs
flour tortillas
eggs
shredded cheddar cheese
granulated garlic, to taste
salt and pepper, to taste
Set tortillas on baking sheet and sprinkle cheese in a circle around tortillas, leaving a well in the center for the egg. Break egg into center of tortilla. Sprinkle eggs with granulated garlic and salt and pepper. Add any cooked meat topping you would like and bake at 350 until egg is set as desired.
The beauty of these eggs is that you can put on
anything you have on hand. Today we happened to
have some ham so we fried it up to add on top. My very favorite topping is leftover taco meat but
don't forget the guacamole, sour cream, cilantro
and salsa!
While I was making the eggs my wonderful husband
Jim was making some fried potatoes.We have found
the trick to good fried potatoes is to bake them first
so all you have to do is add seasonings and brown
them up. Easy peezy!
